TEOTITLAN, OAXACA, MEXICO - JULY 9: Women prepare tejate, a frothy drink made from maize and cacao that is traditionally made in Oaxaca. It is very popular among Zapotec peoples, especially in rural areas. The main ingredients include toasted maize flour, fermented cacao beans, mamey pits and flor de cacao (also known as rosita de cacao). These are finely ground into a paste, and the paste is mixed with water, usually by hand. When it is ready, the flor de cacao rises to the top to form a pasty foam.
